Aceto Balsamico
Our Aceto Balsamico are all from the Modena region, certified PGI or PDO, and are produced in small, up to six generations of family businesses. In the area of Modena Aceto Balsamico is called the "Black Gold" and contains either only grape must or must and wine vinegar. It is a pure and an absolutely luxury product as it ages up to 50 years in barrels of different types of wood (cherry, oak, chestnut, mulberry, juniper), which can easily be over 200 years old. The barrels that contain the Aceto Balsamico are stored in the attic of the "Acetaia", and the huge temperature fluctuations that prevail in Emilia Romagna (the summers are very hot, while the winters are frosty cold) play an important role in production and are absolutely necessary to obtain the optimal quality. All our products are free from additives such as sugar, glucose syrup, modified starches, dyes, stabilizers, etc.
