GENERATION AFTER GENERATION
Our story began four generations ago, when the families Pelloni and Tintori started aging Balsamic Vinegar in precious wooden casks. A sweet inheritance was prepared with love by our fathers, and served as a dowry for each daughter.

THE BARRELS: WOMEN, WOOD AND SCENTED MEMORIES
It is our pride and honour to give credit to the work of previous generations, preserve and pass it on to the future ones. Every Batteria (set of Balsamic Vinegar barrels) tells us a story that always begins with a name of a woman. Back in time, the prestige of a family in Modena was measured by the number of barrels it had. Women were strong and tenacious like the wood of the barrels but sweet and scented like its precious content. But first and foremost, they are mothers being able to create a new life, like the precious “Mothers” of the Balsamic. Thus the memory of those women can be found in every drop of our Balsamic.

IN CASTELVETRO THE NATURA HAS ITS OWN “OLD PANTRY”
In 1973 Mario and Clementina opened a small restaurant on the main square of Castelvetro, where the first recipes with balsamic vinegar have been invented. Thanks to the passion for cooking, the restaurant shortly became a favourite place for numerous local guests. Quite often the friendship grew so close that they begged us to let them take home a souvenir. This is how we began offering small bottles of Balsamic Vinegar. Then in 1975 we opened a small shop called Dispensa (pantry house) inside the family estate. Here a huge old cupboard in dark wood was used to keep our precious Balsamic Vinegar in heavy terracotta jars called “Train”. In the 80’s the passion for balsamic took the upper hand and with the will of Roberta and Marino la Dispensa, that a lot of people called La Vecchia Dispensa, became a place for lovers of the precious “black gold”. The rest is a recent history, and since 90’s we started exploring markets abroad and this made our product well known all over the globe. We proudly can say that La Vecchia Dispensa was one of the first Acetaia that decided to sell to the public. Years ago with license number 13 we started this adventure and even now we obtain highest quality Balsamic Vinegar respecting the tradition of the previous generations.

CONSCIOUS CHOICE
The last but not least chapter of the story began in 2002 with a decision to make a step forward and start producing organic Balsamic Vinegar. Marino with the support of Simone has brought a new focus in the production. Choosing organic means choosing healthier future not only for yourself but also for the planet. It means facing the difficulties of the present time and choosing sustainable growth models in order to improve the quality of our life and to leave a safe fair world to the future generations.

We take care of all the characteristics of our product, right down to the tiniest detail. Sometimes this may seem superfluous or even obsessive but for us every piece is unique and deserves all our attention starting with the selection of raw materials right through to the packaging of the finished product.
